The Far North Method
Rosen rye was developed by Joseph A. Rosen around 1910 in the U.S., making it a distinctly American rye variety. Lost to time after 1970, this heritage varietal was rescued from extinction and replanted in 2015. Our Keystone Rosen seed was planted on section 4 of our farm in 2021 — the first time Keystone Rosen was ever grown this far north, and the first heirloom rye grown on our farm.
LIMITED RELEASE
Base Ingredients: 95% Rosen Rye, 5% Malted Rosen Rye (malted by Vertical Malt in Crookston MN)
Processing: Hammer milled and mashed on site.
Fermentation: Open top fermented with house selected yeast
Still: 500 Gallon Hybrid Pot Still with 8 plate column by Vendome Copperworks.
Distillation: Double distilled to 150 proof.
Age: 2+ years in Minnesota oak barrels
Non-chillfiltered.

TASTING NOTES
Nose: Soft caramel with a hint of fennel
Palate: Caramel richness layered with black pepper and delicate spice
Finish: A warm, lingering spice with a touch of cayenne and salted depth
