Far North Spirits Wins Good Food Award

Gustaf Navy Strength Gin Singled Out for Flavor, Production Methods

SAN FRANCISCO, CA – Over 800 people gathered January 15 to pay tribute to 176 Good Food Award Winners of 2016. By the majestic Golden Gate Bridge on the San Francisco Bay numerous farmers, chefs, journalists, and activists united to celebrate the exceptional food crafters including luminaries Alice Waters, Nell Newman and Slow Food Founder, Carlo Petrini.

Named for the distiller's great grandpa who started the family farm almost 100 years ago, Gustaf Navy Strength Gin is made from estate farmed, non-GMO AC Hazlet Winter Rye planted and harvested by head distiller Michael Swanson on the family farm. Every step of production for this farm-to-bottle gin is done by hand.

"Gustaf was a stoic, stubborn Swede who insisted that anything worth doing was worth doing well," noted Swanson. "He had a powerful bearing, and I thought a navy strength gin would live up to his namesake."

The winners come from 33 states, having risen to the top amongst 1,937 entries in a Blind Tasting with 203 judges held in September. The highest scoring entries were submitted to a rigorous vetting process to verify they met the sustainability and social responsibility criteria to win a Good Food Awards – with over two dozen ultimately disqualified. This year’s winners represent the forefront of American craft food, making products that are delicious, respectful of the environment, and connected to communities and cultural traditions.  As Good Food Awards Founder Sarah Weiner noted in her closing remarks: “Twenty years ago, it took travelling across the globe to encounter something so exquisite that it jolted me into seeing the world with new eyes. Now, you are giving people a taste of how good life can be right here on our own soil…changing America’s definition of Good Food."

The exhilarating goal at Far North Spirits is to make Minnesota a leader in the production of rye grain and world-class rye whiskey. A true field-to-glass whiskey, Roknar is the soft-spoken freshman athlete already too good for the varsity.

Born of non-GMO AC Hazlet Winter Rye and Minnesota 13 Heirloom Corn planted and harvested by head distiller Michael Swanson, Roknar is milled, fermented and distilled in very small batches.

Aged one year in 10-gallon charred oak barrels, it marries aromas of brown sugar and cinnamon with milled grist, vanilla bean and freshly sawn oak. These scents are precisely restated as flavors on a butter-smooth palate, with additional notes of honey and balsa wood. Finishing with a hint of soft-baked pretzels, Roknar lingers cheerfully with a warming note of cayenne.

Minnesota Will Own Rye

Supported by Crop Research Grant, Far North Spirits Aims to Make Minnesota an
International Leader for Rye Grains and Rye Whiskey

Hallock, Minn. ­– Far North Spirits, a micro-distillery located 400 miles northwest of Minneapolis on a 1,500 acre family farm, received from the Minnesota Department of Agriculture in February 2015 a three-year $188,495 crop research grant to complete a first-of-its-kind study to evaluate varieties of winter rye grown in Minnesota for agronomic performance in the field and flavor/sensory performance in the distilling industry.

Michael Swanson, owner, distiller and farmer at Far North Spirits, will administer the grant. His vision is to make Minnesota a leader in the production of world-class rye spirits.

“Kentucky owns bourbon. Scotland, scotch. Minnesota will own rye,” said Swanson. “Our rich soil and extreme climate are perfect for growing this grain. AC Hazlet Rye, our favored variety, is already recognized as our signature.”

Through field trials conducted on Minnesota farms and sensory analyses conducted at Minnesota distilleries, this project will result in a research report that will be valuable to Minnesota farmers, distillers, seed dealers, brewers and maltsters. The University of Minnesota Winter Rye Variety Performance Evaluation will conduct agronomic analysis to assess grain quality, winter hardiness, spring vigor, plant height, grain yield, resistance to lodging and other factors. Minnesota distillers will conduct sensory analysis on the rye to include distillate yield, initial viscosity, and assign a sensory score based on flavor and nose.

The finished study will include data on several varieties of winter rye and be a collaborative project involving several Minnesota farmers, distillers, the University of Minnesota Winter Rye Variety Performance Evaluation and the Barley and malt lab in the Department of Plant Sciences at North Dakota State University.

The goal is to provide producers and end users with an unbiased, reliable source of data, as well as the unique addition of flavor and sensory analysis. The report will be available publicly to all Minnesota farmers through the U of M and shared with micro-distillers nation-wide via the American Distilling Institute.

Far North Spirits, one of fewer than 50 micro-distilleries in the nation that also farms the grains it uses in its spirits, currently produces four spirits that use rye, including two gins, a vodka and a rye whiskey. The Star Tribune named its first release, Solveig Gin, Best New Minnesota-Made Booze in May 2014. Rye grain grown by Swanson during Far North Spirits’ first year of operations was shipped to farmers and micro-distilleries in Minnesota, Maine and Illinois.

Far North Spirits is currently distributed throughout MN, ND, NJ, NY, and SD. Annual production in 2014 was approximately 2,400 six-pack cases; 2015 production is estimated at 6,000 six-pack cases.

#Ålander Spiced #Rum Sets Sail in #Baltic Aboard #VikingLine

Hallock, Minn. ­– Ålander Spiced Rum, craft distilled in extreme northwestern Minnesota by Far North Spirits, is now available on board Viking Line’s cruise ferries that serve Sweden, Finland and Estonia with a base in Mariehamn on the Åland Islands.

“Ålander got its name from these beautiful islands in the northern Baltic,” said owner and distiller Michael Swanson. “We never conceived that a small batch rum made in Hallock would make a four-thousand mile journey. It’s quite the trip.”

Though made in the heart of sugar beet country, Ålander (pronounced OH-lander) is distilled from sugar cane, a federal requirement to qualify as rum. Its name is a reference to the Åland Islands in the northern Baltic, one of the only places in the world that uses sugar beets to make rum.

“In the strive to continuously develop and improve the assortment we offer our customers on board our ships, we found Far North Spirits and wanted to tell the story about the company and the product Ålander,” noted Carl Mörn, head of Viking’s commercial operations.

To make Minnesota's first rum, distillery owner Michael Swanson took an uncompromising approach and selected the highest quality ingredients he could find.

The rum is distilled in small batches using a combination of turbinado and demerara sugars sourced from Louisiana and Florida. The resulting base spirit is an exceptionally clear and delicious Puerto Rican-style rum. Unlike most spiced rums, which are made using artificial flavors, Ålander is infused by hand with whole bean spices: Madagascar and Tahitian vanilla beans, Korintje cinnamon from Indonesia and cinnamon from Sri Lanka, clove and nutmeg from India and allspice from Guatamala. Spice infusion times vary; some are a matter of hours, others take up to three weeks. The rum is finished with a very brief infusion of organic coffee beans, espresso-roasted by Minneapolis-based Peace Coffee, to provide additional depth and roundness. It is bottled at 86 proof.

In a nod to Minnesota's lake country culture, the bold black bottle features of map of Oak Island at Lake of the Woods where the distiller’s family has enjoyed summers at their cabin since 1985.

Far North Spirits Enters New York Market

Far North Spirits, field-to-glass distillers of Minnesota craft spirits Solveig Gin and Ålander Spiced Rum, will begin selling its spirits within the New York market in September 2014.

Summer in MN Calls for Sailing and Gimlets

The Gimlet reclaims its rightful place as master and commander of the summer waves

“A real Gimlet is half gin and half Rose’s lime juice, and nothing else. It beats martinis hollow.”

Summer is the season of sailing here in Minnesota, and no cocktail is more steeped in the rich traditions of the bounding main than the Gimlet.

The origins of the Gimlet can be traced to the British navy, of course. The stars aligned in 1867 when Lauchlin Rose patented a method for preserving citrus juice and the Merchant Shipping Act required the Royal and Merchant Navies to provide sailors with a daily ration of lime juice to prevent scurvy. As Mr. Rose’s potion became omnipresent, it likely took a nanosecond for naval doctor Rear-Admiral Sir Thomas Desmond Gimlette, somewhere off the coast of Tunisia, to decide to mix his daily ration of gin with his daily ration of Rose’s.

Perhaps he never would have made it out of the Channel before attempting the concoction. Either way, the important thing is that the Gimlet was born.

We respectfully disagree, however, with Mr. Chandler, and change his prescription to three parts gin, one part fresh lime juice (with a touch of dill simple). The color should match the pale chartreuse of newly sprouted leaves. Pour the gin and lime juice into a cocktail shaker with ice, and shake vigorously. We mean this. Now is not the time for the well-behaved tick-ticka-tick-ticka-tick foxtrot shake recommended by Nick Charles in “The Thin Man.” With the top tightly in place, position the shaker over your left shoulder and pump furiously back and forth with both hands in a triumphant, hammering motion. At least 20 seconds is essential, as there should be tiny ice chips floating on the surface of the drink. While you shake, hum the chorus to “Rule Britannia” to yourself, and that should be precisely enough time. Strain unadorned (no garnish is necessary…really…especially not a lime wedge, but especially not a filbert) into a martini glass, or over rocks if you prefer, and you’ll have a summertime cocktail as clean and refreshing as sea spray off the starboard bow.

Don your crispest whites, step out onto the main deck with a Gimlet in each hand, and say genuinely witty things to your guests.

Solveig Gin is finally here.

Craft distilled from field-to-glass for the locavore gin lover, Solveig is the first release of Minnesota craft distillery Far North Spirits. 

Perhaps no other spirit allows for as much creativity, as much play and imagination, as gin.  

We started with rye grown on the farm. Then, we took our time distilling the spirit with each botanical individually to capture its sweet spot. We experimented with those distilled essences to find just the right balance of juniper and thyme, coriander and lavender, grapefruit, angelica, orris root and gentian. The resulting spirit is bright and fresh, with the depth of early summer rain. Yes, this is delightful, harmonious, music in a glass.

Bottled at 87 proof, each embossed label carefully applied by hand, we happily present to you, dear drinker, the work of our hearts.

Minnesota's First Field-to-Glass Gin

Hallock, Minn – Far North Spirits began production today on Minnesota's first field-to-glass gin made from rye grown on the family farm where the distillery is built. The first bottles of Solveig Gin are expected to be on the shelves statewide in Minnesota and North Dakota in time for Christmas.

Solveig (pronounced SOUL-vai, long O and no G) is a true field-to-glass gin, meaning the distillers also planted and harvested the grain used to make the spirit. Solveig began as AC Hazlet Winter Rye in September 2012 on section 4 of the family farm. The rye grew to be about four feet in height and was harvested on September 17, 2013. The grain was cleaned locally before being milled onsite at the distillery. 

Solveig is a New American Style Gin leading with thyme and grapefruit peel, with lighter juniper notes. In addition to being field-to-glass, Solveig is made by individual botanical distillation. Recognizing that each botanical has its own unique flavor profile, we distill it separately, allowing us to capture its purest essence. Those botanical essences are then blended together to make the final spirit. Although most gin is not produced this way, Far North is committed to this more labor intense process as it results in a truly superior gin with greater depth and character.
